Above, you said that 1 drop essential oil was equal to 1 tsp. lemon juice or extract. The lemon juice exchange may be right, but lemon extract is much, much stronger. My experiments show that you need about 1/8 tsp. oil to equal 1 tsp. extract. There are some other exchange amounts listed on my website, see some at http://www.theprovidenthomemaker.com/1/post/2012/01/cooking-with-essential-oils.html

Hi Kareena,

Pure lemon essential oil does not contain the same enzymes found in the juice or pulp of lemons. Lemon essential oil is distilled from lemon rinds and is sometimes used for digestive supporting benefits and can be part of a healthy gastrointestinal maintenance program. It also provides healthy antioxidant benefits and has natural antimicrobial properties.
But lemon essential oil does not contain digestive food enzymes, sugars, and other nutrients found in the whole lemon fruit.
